The ultimate IPA, combining the latest hops and technology for a supremely impactful hazy IPA.
[Character]Over the top and heavily hopped, this Thiol-driven hazy IPA uses all of the modern hop products and techniques. An oat forward, light, soft, pillowy and semi-sweet malt profile provides the base for huge tropical citrus hop flavours and aromas.[Food Pairing]Chicken namban, lime-infused grilled prawns, beef tacos with guacamole[Naming]We decided to make two beers with Inkhorn for our collaboration. Inkhorn don't only make one style, but they are especially known for their hoppy beers. As a result, the natural assumption would be that we would be making an IPA with them, so naturally we decided to make one of those, whilst also going against expectations with the other beer. With that, the two names were quite obvious![Brewer's Voice]For our second brew with Inkhorn, we went more of what is expected; being renowned for making them so well, as much as we love a barley wine, we are also excited about making a hoppy beer with them, too! And so, we did just that - and hoppy, it certainly is! This beer is one of the biggest we have done, pushing the limits of our system for the amount of malt it can handle in one brew, as well as using what may be the most hops we have ever put into one beer.
This beer focuses on Thiols and big hop flavour through the use of a blend of Citra, Simcoe, Nelson Sauvin, and a little NZ Cascade in the mash. Not only did we use a lot of hops, but just about every hop product as well, Dynaboost Simcoe in the whirlpool, Citra Hyperboost in a biotransformation dry hop, Cryo(T45) in the normal dry hop after that, and lastly Nelson Sauvin Hop Kief in the BBT. This beer is loaded with big overripened tropical fruit flavour from start to finish. Fermented with a thiol-boosting yeast, we brewed this beer at 8% ABV with a blend of pilsner, oats and spelt malt to let those yeast esters and thiols. With plenty of body from this big beer to back up the hop load, not much more needs to be said about this one: if you like big hoppy beers, this one is for you!
